Brendon Keys, the winemaker at BK Wines, is known for his innovative approach to winemaking and his use of minimal intervention techniques. Some of the unique winemaking techniques that he uses include: Whole-bunch fermentation, wild yeast fermentation, extended skin contact, which means that the juice is left in contact with the grape skins for a longer period of time. And aging in amphora, which are porous vessels that allow the wine to breathe and evolve naturally.
